It was hard to get back to into the swing of things this morning. Today it is back to school, but by the look of our breakfast table you would think that we were still on holidays. We did manage to get to school just as the bell rang. Maybe I shouldn't have cooked fried potatoes and eggs.
A recipe inspired by this book. I fried some of these leftover potatoes and poured over a couple of beaten eggs to cook. Sprinkle with salt - Yummy.
But school is back, I better get back to muesli, yoghurt and fruit for tomorrow mornings breakfast.

Yes it all comes around too quickly, fortunately the kids are pretty organised so they get themselves there pretty well.
